Namaste!

When we view the world from the perspective of our own senses, it is easy to perceive all

existence as one truth – your truth. But when we are able to step back through the practice of meditation and conscious behavior we can perceive the other components of our existence interacting and interweaving with each other as one – from this standpoint we can actually glimpse and align with the universal Truth – Truth with a capital T.

Here is an awesome recipe from Deepak! (:

Apple Raisin Muffins

2 cups whole wheat flour
¼ cup turbinado sugar
2 tablespoons baking powder
½ teaspoon baking soda
½ teaspoon nutmeg
1 teaspoon cinnamon
1 cup raisins or currants
½ cup chopped walnuts
1 cup apple juice
¼ cup applesauce
1 tablespoon canola oil
¼ cup maple syrup
1 teaspoon vanilla extract
1 large egg beaten, or 2 egg whites
3 medium apples, unpeeled, grated, or finely chopped

Preheat oven to 350 degrees. Spray a muffin pan with oil and set aside. In a bowl, combine flour, sugar, baking powder, baking soda, nutmeg, cinnamon, raisins, and walnuts, and stir together thoroughly using a wire whisk. In a separate bowl, combine apple juice, applesauce, canola oil, maple syrup, and vanilla. Stir well, then add the egg and apples. Add the dry ingredients to the wet ingredients and combine gently. Scoop into the muffin pan and bake for 15-20 minutes or until golden brown. An inserted toothpick should come out clean.
