Homemade Chocolate Pudding from Local Harvest

Homemade Chocolate Pudding

For the most delectable taste, choose a good quality bittersweet chocolate bar. Adding a bit of espresso powder to the mix accentuates the chocolate taste, but may be considered optional.

Serves 6 to 8

* 1/3 cup sugar (I would reccomend a sugar substitute, perhaps xylitol)
* 2 tablespoons cornstarch
* Pinch salt
* 2 cups whole milk
* 1 large egg
* 1/2 cup finely chopped bittersweet chocolate
* 1 teaspoon espresso or other instant coffee powder
* Whipped cream, for garnish (optional)

Mix the sugar, corn starch, and salt in a heavy 2-quart saucepan. Gradually whisk in milk.

Turn the heat to medium-high. Stir constantly as the mixture comes to a boil. When you see bubbles begin to form around the edges, lower the heat to medium, and continue boiling gently while stirring for 1 minute. Turn the heat down very low.

Lightly beat the egg in a small bowl. Gradually whisk a few tablespoons of the hot milk into the egg. Whisk the egg mixture into the pan. Add the chocolate and coffee powder.

Whisk continuously until the chocolate melts and the pudding thickens, about 2 minutes. Cool in the pan for 5 minutes, then spoon into pudding bowls.

Serve warm, room temperature, or chilled. Garnish each portion with whipped cream, if you wish.

White Bean Spread - Dr. Weil's Ways

White Bean Spread

Description
When thinking of great taste accompaniments to bread, challenge the butter and olive oil and balsamic vinegar routine with this herby spread. What you have here is a versatile accompaniment for toasted baguettes or warm crepes. You can also use it as a dip made for thick chunks of French bread or pita sandwiches. Plan one day in advance in order to soak the beans overnight. Of course, you always have the option of using canned beans if you're really pressed for time.

Ingredients
2 cups Great Northern or cannellini beans, soaked overnight in 6 cups of water to cover and 1 teaspoon baking soda
1 bay leaf
1 teaspoon dried basil or pesto
2 teaspoons freshly squeezed lime juice
1 clove garlic, coarsely chopped
1 teaspoon ground cumin
1 teaspoon salt
2 tablespoons freshly grated Parmesan cheese
3 tablespoons extra-virgin olive oil
1 whole grain baguette

Instructions
Dr Weil Suggests:
I much prefer the pesto to the dried basil.

Note: Do not drain the water that the beans have been soaking in overnight. Bring it to a boil and cook for 45 minutes. The beans should be easily pierced with a fork.

1. Preheat the broiler.

2. Drain and transfer the cooked beans to a food processor or blender. Add the basil or pesto, lime juice, garlic, cumin, salt, Parmesan cheese, and 1 tablespoon of the olive oil and process or blend until smooth.

3. Cut the baguette into 1-inch slices and brush the remaining tablespoons of olive oil over them, then broil on the lower rack until lightly browned.

4. Put the toasted baguette slices on a platter. Scrape the spread into a nice bowl and set it in the middle of the platter and serve.

Tip from Rosie's Kitchen:
As long as you are preparing beans from scratch, you could double the amount and reserve half to make White Beans and Fusilli.

ZipCar is a car-sharing service where anyone can reserve a nearby ZipCar car and use it for the day. In London, the company is partnering with ParkAtMyHouse.com, which lets people rent out their private parking spaces, to make the process of renting and parking a ZipCar pain-free, according to SpringWise.

The partnership gives people more places to park in London, and also gives the parking space owners a larger pool of clients and the luxury of having a ready-to-use ZipCar available whenever they wish.

ParkAtMyHouse features an intuitive search function that lists available spaces near a point of interest. Further, its users can post classified ads requesting parking spots adding visibility to the parking demand.

Why You Should Eat Your Spinach

This bright green vegetable is a veritable powerhouse of nutrients, and one that Dr. Weil recommends you have on hand in your kitchen. Spinach contains lutein and zeaxanthin, antioxidant carotenoids that may help prevent cataracts and macular degeneration. Is it also a tasty source of calcium and folate, good for your bones, and provides a generous amount of vitamins K, A, and manganese. With three common varieties to choose from - the “flat leaf” variety; savoy, which has curled leaves; and baby spinach, a sweeter version of the flat leaf, spinach is a versatile vegetable you can eat raw, lightly steamed or even pureed. Always seek out organically grown spinach, as pesticides are commonly used on conventionally grown varieties. Mothers' Milk Reveals Ancient Diets

April 17, 2007 — Breast milk from women in regions where the first humans likely emerged suggests that Western diets — with their high amounts of carbs, sugars, salts and oils — go against the optimal human diet.

That conclusion comes from a new study that also suggests infant formula guidelines, which are based on Western dietary recommendations, need reassessment.

"It is somewhat strange to first drastically deviate from what we as Homo sapiens derive from in an evolutionary sense, then, because of this deviation, we get all kinds of new diseases that many blame on environment, notably diet, and then we set recommendations on the basis of this abnormal diet!" author Frits Muskiet told Discovery News.
